I often add applesauce or mashed banana into my pancakes, but as I was prepping ingredients for my favorite breakfast recently and digging around in my fridge, I spotted a bowl of leftover steamed sweet potato–which I often keep around to throw into salads and quinoa dishes–and had a fabulous idea.
Vegan sweet potato pancakes are a delicious and healthy alternative to traditional pancakes. They are fluffy, slightly sweet, and full of flavor from sweet potatoes. These pancakes are perfect for breakfast or brunch, and they can be customized with your favorite toppings. Here's a simple recipe for vegan sweet potato pancakes.
Ingredients:
- 1 cup mashed sweet potatoes (cooked and cooled)
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 1/4 cups almond milk (or other plant-based milk)
- 2 tablespoons maple syrup (or agave syrup)
- 2 tablespoons coconut oil or vegetable oil (melted)
- 1 teaspoon vanilla extract
Instructions:
Prepare the Sweet Potatoes: Start with cooked sweet potatoes. You can bake, steam, or microwave them until soft, then mash until smooth. Let them cool to room temperature before adding to the batter.
Mix the Dry Ingredients: In a large bowl, combine the flour, baking powder, baking soda, salt, and cinnamon. Stir to combine.
Mix the Wet Ingredients: In a separate bowl, combine the mashed sweet potatoes, almond milk, maple syrup, coconut oil, and vanilla extract. Mix until smooth.
Combine the Dry and Wet Ingredients: Add the wet ingredients to the dry ingredients and mix until just combined. Avoid over-mixing to keep the pancakes light and fluffy.
Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat. Lightly grease with a bit of oil. Scoop about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges start to set, about 2-3 minutes. Flip and cook for another 2-3 minutes, or until both sides are golden brown.
Serve the Pancakes: Once cooked, transfer the pancakes to a plate. Serve warm with your favorite toppings, like maple syrup, fresh fruit, nuts, or dairy-free whipped cream.
