Whether you are on the Keto diet specifically or you are looking for a low-carb, gluten-free, healthier pizza option, this keto pizza recipe is for you.
There is something comforting about holding a nice slice of homemade pizza and then gobbling it up and going for another slice.
My brother has been on the Keto diet for three years now and he loves it. So we did a collaboration on keto pizza. I didn’t think I would like the crust, because, I am a fan of a traditional crust, but I totally did. This homemade cauliflower and cheese crust is really good. The pizza itself is super easy to make, if I can do it, you can do it. Let’s get baking!
Ingredients
Crust
- 2 cups of grated cauliflower about half of a medium cauliflower
- 1/2 cup of coconut flour or almond flour (56g)
- 2 cups of grated mozzarella cheese organic, pasture-raised, if possible (250g)
- 3 large eggs
Toppings
- 1/2 cup sugar-free pizza sauce add more or less (112g)
- 1 cup of grated mozzarella cheese 125g
- Toppings bacon, pepperoni, spinach, mushrooms, onions, olives, etc.
Instructions
Preheat the oven to 425 degrees F. (218 C) In a large bowl add the grated cauliflower. Use a food processor or cheese grater. Next, add in your coconut flour or you can use almond flour. Then add in your cheese and your eggs. Mix those ingredients all together until a dough forms.
Then pour the dough onto a parchment paper-lined cookie sheet or pizza pan. Shape the dough into a large round circle, by pressing down with your palm and fingers.
Place the shaped dough/crust in the oven and bake it for 14 to 17 minutes until the edges are lightly brown. Let the crust cool for 5 to 10 minutes before adding the toppings.
Put whatever toppings you want on top. Use a traditional pizza sauce, or use a sugar-free option if you can find it. I like to add, cheese, pepperoni, olives, mushrooms, and spinach.
Place the pizza in the oven and bake it for about 10 to 12 minutes until the cheese is all melted. Let it cool for a few minutes and then serve! Enjoy!
