Caesar salad is one of the best known salads in the world. There is no country that does not prepare this type of salad, always adapting it to their customs and gastronomic tastes. Today I share with you how to prepare the recipe.
There are many versions about what could be the origin of Caesar salad. The best known is, without a doubt, the version in which a group of American aviators traveling to Tijuana in search of alcohol. These airmen arrived at Caesar's Hotel, run by chef Cesar Cardini, ready to eat a salad. As Cardini did not have the necessary ingredients for its preparation, such as tomato or onion, he decided to take several ingredients that he had at the time and with them he made a "salad" that delighted these airmen. They were the ones who took the recipe back to their country and from there it became known all over the world. Later, Cardini registered the sauce with the name "Cardini's Original Caesar Dressing Mix" and the salad took the name of Caesar Salad in honor of this cook.
INGREDIENTS FOR 4 PERSONS:
1 romaine lettuce
200g Parmesan cheese
40g canned anchovies
1 teaspoon of mustard
4 clove garlic
1 chili pepper
1 sprig of parsley
Toasted bread cut into cubes
1 teaspoon Worcestershire sauce
2 chicken Milanesa
1 egg
2 tablespoons lemon juice
Olive oil
Salt and pepper
PREPARATION
1.- The most important part of this recipe is the sauce because together with the Parmesan cheese it gives it that spicy touch. To prepare it, we place in a blender 1 egg, 200ml of olive oil, and the lemon juice, let it blend for 10 seconds and we will have our mayonnaise ready, the base of the caesar sauce. Keep in mind that it must be somewhat liquid, because we are going to add more ingredients.
Then we add to the mayonnaise that we have just prepared, a clove of garlic, the lemon juice, the anchovies, the spoonful of mustard and 50 g of Parmesan cheese. We beat everything again until it is thick.
Once we prepare the sauce, we start with the salad and the first thing we will do is to season the milanesas, we blend garlic, chili and parsley and add to the chicken, salt and pepper, let stand for 40 minutes to grab taste and flavor and then cook in a frying pan with a drizzle of oil and high heat to turn and turn, once ready, cut the chicken breasts into medium sized cubes.
Meanwhile in a bowl, we put the sauce and on it we place the lettuce cut in pieces, the breads, the parmesan cheese and finally the chicken. We finish dressing our salad with more caesar sauce and then serve with the garnishes you prefer, this time I accompanied it with some crunchy french fries.
