Lunch at my grandma's

in GEMS10 days ago

My grandma invited me and my wife over for lunch and served us up two of my favourite dishes. Squid curry the red looking curry and assam prawns!

Squid curry is a delicious and flavorful dish popular in coastal regions, especially in South and Southeast Asian cuisines. It's typically made with tender squid simmered in a spiced curry sauce, often flavored with ingredients like coconut milk, tamarind, garlic, ginger, and a blend of aromatic spices. The heat level can vary depending on the region and personal preferences, but it's usually moderately spicy, with a balance of tangy and rich flavors.

Malaysian squid curry (or sambal sotong) features squid in a spicy sambal sauce, made from chilies, shrimp paste, and tamarind. It has a strong, bold flavor profile.

Assam prawn is a tangy and flavorful dish typically found in the cuisine of Assam, a state in northeastern India, known for its use of earthy and bold flavors. The dish often features prawns cooked in a sour, spicy gravy, with tamarind (or sometimes tomatoes) giving it its characteristic tang. The dish beautifully balances heat and sourness with minimal use of oil, letting the freshness of the prawns shine through.

Assam dishes often rely on mustard oil for their cooking base, which gives the dish a slight pungency and distinctive flavor. Assam prawn is typically served with plain steamed rice or sometimes rice noodles, allowing the gravy to be soaked up. The dish is both comforting and bold, perfect for anyone who enjoys the interplay of spicy and tangy flavors.
