On its own, plain mochi has the flavor of neutral gummy candy mixed with marshmallows. The rice gives it a starchy aftertaste. Its texture is likewise soft, chewy, sticky, and elastic.
Green tea, herbs, sweeteners, and more are just a few of the many ingredients that can be used to flavor mochi. It can also be filled with a variety of ingredients, though sweetened bean paste is a common option.

Ah, so it is like of like just plain gelatin and then they add stuff to it. I got it. That definitely sounds like a really complex mouth feel!
