Egusi soup is one of the preferable soup served in West African home. because of its exotic satisfactory taste. Many families enjoy this soup and cannot miss it sometime within the day. So I want to share with you all how to prepare this dish and enjoy it.
**Ingredients **
Blended egusi
Salt
Red oil
Maggie
Onion
Pepper.
Crayfish
Dry fish and chicken
Bitter leave

The first thing I did was to blend my pepper and crayfish, I love using local mortal. 😁because it gives me exactly what I wanted.
I love molding my egusi with cold water so it will have thick consistency and I'm not a fan of overheating palm oil.
With the meat on the gas cooker already added small quantity of water, small salt and two cube of Maggie. I allow to cook for 18 minutes.
Then add my desirable amount of salt, Maggie, pepper, and onion and cover to cook.
The egusi should be added when you feel nothing else is to be added, just add the molded egusi and I usually do not stir the egusi at this point, i give it some time to curdle.
After some 6 to 8 minutes I stir and add my bitter leave . then add more little water if
required.
I leave for 35-40 minutes and it can be served with semovita, eba, Pounded yam, amala. Etc(my own image).
