Arroz con Marisco - Seafood Rice [ESP | ENG]

A punto de acabar mis cortas pero bien merecidas vacaciones, es un buen momento para darme un buen homenaje gastronómico degustando un delicioso arroz con marisco.

Para evitar entrar en controversias con aquellos que solo admiten denominar "paella" exclusivamente a la paella valenciana, diremos que se trata de un arroz con mariscos cocinado en una paellera.

Como toda buena paella o arroz que se precie la calidad de la materia prima es fundamental, y en este caso un marisco y un pescado frescos y especialmente un fumet o caldo de pescado muy concentrado y sabroso que es el que en definitiva le va a dar el sabor al plato.

El punto de cocción también es esencial; el grano de arroz no debe pasarse pero tampoco quedar excesivamente duro. Y como en este caso, si queda algo pegado al fondo de la sartén sin llegar a quemarse ya conseguimos una receta excepcional.

Como acompañamiento pedimos un plato de lapas a la plancha cubiertos de un delicioso mojo verde hecho con cilantro y para terminar un helado de pistacho y polvito uruguayo que estaba exquisito.

El capricho ha resultado algo caro pero cuando la comida está buena merece la pena pagar por ello.

The point of cooking is also essential; the rice should not be overcooked but neither should it be excessively hard. And as in this case, if it sticks to the bottom of the pan without burning, we have achieved an exceptional recipe.

As an accompaniment we ordered a plate of grilled limpets covered with a delicious green mojo made with coriander and to finish with a pistachio ice cream and Uruguayan powder, which was exquisite.

The treat was a little expensive but when the food is good it is worth paying for.
