Materials
• 2 medium size boiled beets
• 250-300 grams of strained yogurt
• 1 tea glass of walnuts
• 2 cloves of garlic
• 2 salts
Fabrication
We generally consume red beet by pickling it. It is consumed, but it is not consumed lovingly because of its sugary taste. To be honest, I didn't consume it at all until 4-5 years ago. Now I consume it in summer and winter. Beetroot is a very useful vegetable. I am sure you will like beet even more after this recipe. The carrot tarator we know is made with red beetroot.
First, I will tell you my story of loving this beet. This vegetable is consumed a lot in İzmir/Ödemiş. I worked here between 2015-2018. I saw this beet in a restaurant I go to regularly. They cut the boiled beet into cubes and fried it with tomato paste. It was served with yoghurt on it. I like this version as well, but I prefer the one in the form of tarator.
First, boil the beets until they are soft. I prefer to boil less. After it is boiled, we cool it a little. We grate the cooled beet
Then, let's pull the walnut from the rondo in a coarse grained way. Let's crush the garlic. Let's combine all the ingredients with the strained yogurt. It tastes better if it sits in the fridge for a day. And our beet tarator is ready.
