How was your weekend? I wish I could say mine was full of parties and overeating but alas, I’ve been trying to get everything together to leave for vacation on Friday so that wasn’t the case. Tough life, I know.
I did manage to spend a little time in the kitchen and came up with these amazing freezer waffles. I’ve been craving having a stash of freezer waffles again to grab at my convenience ever since I finished off the last of these this summer. They’re vegan.
Homemade Frozen Waffles Recipe
3 cups berry mix (fresh or frozen)
3 cups all purpose flour
2 cups unsweetened vanilla almond milk
1 tsp vanilla extract
2/3 cup vegetable oil
4 tsp baking powder
2 tbsp sugar
1 tsp salt
Mix almond milk, vegetable oil, sugar, and vanilla in a bowl.
Mix dry ingredients in a separate bowl.
Combine the wet ingredients into the dry and stir. Fold in fresh or frozen berries.
Pre-heat waffle iron. Place about 4 tbsp of waffle batter into waffle iron and cook. Once done, place in a single layer on a sheet. Repeat the process until all the waffle batter is gone.
Place baking sheet in your freezer for about half an hour. Then transfer waffles to a resealable plastic bag. Store in the freezer and simply toast when ready to eat.
So so yummy.
