Mushroom-omelet a nice lunch

Happy fungi Friday friends. here are two different ways to cook a simple but delicious lunch omelet I made today and sharing here with you. This post is my contribution to #fungiFriday by @ewkaw.

Ingredients:
7/250 grams of Champignon
3 eggs
1 small carrot
1 small spring onion
2 cherry tomatoes
1/2 tsp black pepper
1 tsp salt
2 tsp butter
1 tsp olive oil
20 grams of cheese

Finely chopped carrot and spring onion.
Cut mushroom in round shape
slice tomatoes.

Whisk eggs and add pepper and salt.

In a skillet add oil and butter.

Place mushroom rings and sliced tomato in the skillet.
Cook them until they changed color.

Stir carrot and spring onion in the whisked egg.

Spread the egg mixture on the mushroom and tomato slices evenly.

Cover the skillet and cook on low heat for around 5 minutes.
At the last minute put a few slices of Jarlsberg cheese on the omelet.

It was tasty and well done, but I couldn't get the result that I wanted to achieve.

so I tried a new way.
The same ingredients.

Here I did first all the preparations the same as before. chopping carrot spring onion sliced mushrooms and cherry tomatoes.

Whisked eggs with salt and pepper, carrot, mushroom stems, and spring onion.

Additionally added 20 grams of grated Jarlsberg cheese to the egg mixture.

After oiling the skillet placed all mushroom rings and as soon as they change color removed them from the skillet.

Spread oil and butter on the skillet.

Poured the egg mixture into the skillet the heat I kept medium until it was nearly done.

Placed mushroom rings and tomato slices on the omelet

Covered and cooked for around 2 minutes on medium heat.

Same taste but this way looks nicer.

Served with homemade focaccia bread slices.

We use eggs regularly. Everybody makes an omelet, maybe there is nothing special about it. But by cooking them a little different style it tastes various and delicious. and looks also different. Happy fungi-Friday friends have a nice weekend and try it on Sunday.
