Momos stuffed with champignon and yellowlegs mushrooms

Ingredients for stuffing:
250 grams champignon
5 florets of broccoli
1/2 cup dried yellowlegs mushroom soaked
1 onion
4 cloves of garlic
1 red chili
1 tsp black pepper
1 tsp salt
2 tbsp oil
1/2 lemon juice
1 tsp roasted sesame seeds
4 tbsp homemade mushroom sauce which i made last week
2 tbsp tomato ketchup
1 tsp chopped spring onion greens.
Making momos sheets
Ingredients:
1 cup glutinous rice flour
1/2 cup white flour
1tsp olive oil
1/2 tsp salt
Making mushroom and broccoli mince using a food processor.
Mushroom mince
Onion garlic and chili mince used the food processor.
After heating oil in a pan added onion garlic chili mince stirred well until aromatic.
Adding mushroom mince and sautéed. stirred until the water evaporated.
Added salt and pepper after the mushroom water dried up.
1 tbsp squeezed lemon juice and 2 tbsp homemade mushroom sauce blend into it. Covered and cooked for 2-3 minutes
Stuffing is ready

Boiled 1 cup water in a saucepan. added salt and oil and then gradually both flours mixture stirred hard and continues.
Take cooked flour on the board and start kneading when it is warm be careful do not to burn your hands.
Nice and soft dough is ready for roll sheets for momos. cover the dough to avoid getting dry.
My fast and easiest way to roll small sheets.
First, make a big ball from the dough and roll it using a rolling pin.
Then cut small rounds using a cookie cutter.
and roll the small sheets in the desired size and thickness.
Making momos
Took one rolled sheet and put the stuffing in the center folding them according to my level of creativity I am making it the first time. so done very simple way.
Steamed them in my easy way using stainless steel strainer on the saucepan set momos on it covered with cloth to avoid water dripping on it, and covered and steamed the momos for around 8-10 minutes until transparent.
Served with some soy sauce and roasted sesame seeds and tomato ketchup.

This is beautiful! I didn't know you could use glutenous rice flour for this. I have some and I have never used it. Must give it a try. Thanks for sharing this recipe. It looks super delicious and your shaping is perfection my friend!😊
The rice flour in boiling water became a softer texture. If only white flour makes the sheets chewy. for steaming better with rice flour. if want to fry then ok with white flour. Thank you for your nice comment.💓🙏
