Today I had a real Fungi Friday!
It all started with heavy rain in the morning. And I already thought that my daughter and I would spend time at home playing games and reading books.
However, after breakfast and getting ready, when we were ready to go outside to feed our pets and birds in order to quickly return before getting wet, we found that the rain had stopped and we could take our morning walk.
And right outside the gate, a family was waiting for us. A family of...
honey mushrooms!
Small red coins winked at us from the thick young grass.
To be honest, I would not disturb them and cut them off, they stuck out so cute and friendly.
But there was not one, but many families nearby!
This immediately determined my occupation for the evening - pickling mushrooms.
Yesterday, a tractor with a mounted mower drove past our street to clear the side of the road from grass.
And from under the cut grass, these cheerful, bright and insanely delicious mushrooms appeared - meadow honey mushrooms!
Collecting these mushrooms is practically jewelry work!
In order to leave more roots in the soil for the next harvest, in order to end up with beautiful food (with a whole hat and leg), I knelt down with each family and carefully cut each representative separately with a penknife.
In addition, it can be very difficult to notice even a whole family in thick grass. Honey mushrooms know how to hide)
It started to rain again.
And in this dampness, waist-deep in wet grass and with wet hands, I felt the joy and pleasure of being able to take these beautiful photos on my knees, as if thanks to these little creatures for the opportunity to enjoy them outside and inside.
There was little time left before the children's lunch and sleep, and I walked only one way on the road from my house and back on the other side of the roadway.
That's how much again I got 😋
On the way home, I remembered that today is Friday!
A real Fungi Friday, I thought!
Well, delaying cooking would not be interesting.
Once called a mushroom - climb into the box!
Fungi Friday means Fungi!
Mushrooms were cleaned of grass and washed thoroughly under running water.
Since these are wild mushrooms, and not grown under sterile conditions, I make sure to boil them. Twice. 15 and 20 minutes after boiling.
I prepare the marinade separately: for 1 liter of water, one tablespoon of sugar and salt, two bay leaves, three stars of сlove and three cloves of garlic.
Cooked for 10 minutes after boiling.
Mushrooms laid out in a sterile jar and added 1 tablespoon of vinegar.
After that, poured the marinade to the very top, so that as little air as possible remained. I closed it tightly with a sterile lid, turned it upside down and put it under a warm blanket until it cooled completely.
It turned out just one small jar, but what a beautiful exclusive dish it will be at a winter feast!

I love mushrooms, they are delicious, before move to this country I seldom eat it, but now almost every week, they smell so nice and yummy.
I agree with you - mushrooms are very tasty and healthy food!
Plus they can replace meat in the vegetarian's menu (its not about me, but it is great feature of mushrooms).
