Nigerian Foodie - How to cook Ogbono Soup

Hello Foodies,

Ever wondered what a native Nigerian food looks like?

Look no further!!!

Ogbono Soup is a local delicacy popularly made in the South East Nigeria. The meal is a native delicacy of the Igbo people.

INGREDIENTS:
Ogbono
Stockfish
Dry Catfish
Crayfish
Kpomo (Skin of Cow)
Palm Oil
Uziza
Ugwu (Pumpkin Leaves)
Pepper (optional)

First step-

Boil the stockfish with salt and seasoning cubes for 10 minutes.

After the stockfish has simmered, add the dried catfish and kpomo. Allow to cook for 15 minutes. If you are using red meat or any other kind of protein, this is the time to add it.

While the protein is boiling, you have to melt the Ogbono in palm oil.

In a separate pan or pot, put the oil and allow it get hot then mix the Ogbono powder in the oil. Make sure there are no seeds.

Once that is done, mix the paste into the stock and turn properly. Allow to simmer for 10 minutes.

Add the uziza leaves and ugwu. Let it simmer for 5 minutes.

Stir properly and your soup is ready!!!
