This makes me want to go and drink some coffee. I quite like the look of the Buter-Brodsky bar and the Coffee 3 place, the Buter-Brodsky bar place looks pretty special and great coffee and cakes. The Coffee 3 place I also like this style, but not sure about the floor sitting though. It goes to show though, that you would sacrifice good surroundings for nice coffee. What are the factors to make a coffee good though? beans? preparation?

Floor sitting is a bonus option (I never seen in other places), its only one room - but the place has three others, with normal tables to sit, etc. Two floors is very cool too. Great spot, just located too far from everyday routes and tourist-oriented center of the city.
Hmmm... this is a controversial statement. Looking at the situation in general, I would say the drinks are plus-minus all the same “average” quality, but the price / convenient location / cozy atmosphere / unique design / good photo-fruendly lighting - of course, it differs. Under this condition, the taste of coffee, beer or other drink does not become a decisive factor in choosing a landing spot :)
There are some factors mixed in, really. Fresh roasting, degree of grinding, water properties, and of course the beans specialty itself - these are the most determining factors. Preparation also affects the taste. More precisely, the method of preparation - as coffee can be brewed in different ways. Jezzwa, Moka, French press, etc etc etc. It is important to remember that if your coffee dated (like, it was roasted six months ago and was gathering dust at a warehouse... or bought as ground coffee at a supermarket) - forget about its unique taste! such a drink will have some standard, identical low-grade taste... 🤓
