I know they can go rancid after some time, but I've kept bags of coffee for almost a year before because I caught a really good sale and stocked up when I could (they were almost half off, so yeah! I bought tons!). I even "lost" one of the bags because the cupboard where I kept them had this weird connection to the cupboard next to it where there was essentially a little drop where things would often fall through and you wouldn't see it unless you blindly stuck your hand in the gap. So even months after I had finished all the other coffee I was cleaning out the cupboards and discovered I had one more, and it was still fine. :)
