The book this quote is from is Unweaving the Rainbow - Richard Dawkin. The book title comes from the idea that Newton ruined the Rainbow when he unveiled how a rainbow is created, removing the fantasy and illusion. But Dawkins basically writes a long essay filled with his own variations of poems and explanations of modern and classical physics to argue that the rainbow has not been destroyed, but granted greater beauty through explanation.
Another amazing one would be the Selfish Gene. I haven't read it myself but it has been highly recommended to me.
