The Ofada Stew is one of the sweetest Yoruba stews. I’ve always wanted to give it a try and after watching so many videos online, today felt like the best day to make my Ofada Stew.
This stew is named Ofada Stew because it is usually eaten with a particular type of Rice called Ofada Rice. This doesn’t mean it is compulsory to eat it with Ofada Rice. It can be with any other meal like Spaghetti, Ekuru and so much more
Ingredients
Palm oil
Onions
Locust Beans
Green pepper
Ripe pepper
Fish
Ponmo and
Seasoning.
I poured my palm oil inside the pot. I then waited for it to get hot before putting my onions. Putting onions in a hot palm oil makes the stew more tasty so that’s the first step.
We have to be vigilant and also time conscious. The onions do not need to get burnt before pouring the your proteins. We’re not in a favorable economy so I always make sure that I manage the funds I have. So, I added my stock fish and kponmo to the frying oil so they can get fried as well.
Well, some people like it when they pour their locust beans after the pepper but I like mine before adding pepper to the oil. I added my locust beans at first so that it will get fried as well. It is a stew and everything needs to get fried.
Finally, I poured my pepper into the hot oil after I had poured my locust beans.
I waited for it to boil well and I kept on staring because if I do not do so, the stew will start getting burnt even without being done with it. Then, I added my seasoning. Even without the salt and seasoning, it was tasting well already because of the help of the locust beans and also the help of the tasty proteins that I have added to the stew already.
After this step, the stew is done. Let’s see the final result of my stew.
Now, this stew can be eaten with Rice, Spaghetti, Moi-Moi and so much more.
