A Colorful and Nutritious Sunday Meal: Multicolored Rice Recipe

Hello friends! Sundays in India are special—a day when the entire family is home, making it the perfect occasion to prepare something delicious. While we always strive for tasty meals, wouldn’t it be wonderful if they were also highly nutritious?

Today, I’m sharing a recipe that is not only flavorful and healthy but also visually appealing. A plate filled with vibrant colors—so enticing that even kids, who usually refuse to eat vegetables like spinach, carrots, and beets, will enjoy it happily.

My children dislike eating leafy greens and root vegetables, so I’ve found a creative way to incorporate these nutritious ingredients into our meals. I hope you’ll love this idea too!

Normally, I cook 2 cups of rice for my family, but today, I’ll prepare four different types of rice in smaller portions ,½ cup each. Yes, it takes a little extra time and effort, but when it comes to our family’s health, it’s absolutely worth it.

Four-Color Rice Recipe

To prepare this meal, I’ll be making four different rice varieties: Green, Red, Orange, and White—using spinach, beetroot, and carrots as natural color enhancers.

Ingredients:

2 cup rice (washed), ½ cup each color

1/2 cup spinach (blended into a paste)

1/2 cup beetroot puree

1/2 cup carrot puree

garlic clove (chopped)

green chili (optional)

oil

Salt (to taste)

water

Green rice Method:
To achieve a vibrant green color. I'll cook the rice with a fresh spinach puree.

Heat oil in a pan and sauté chopped garlic and green chili until fragrant.
Add the 12 cup washed rice and spinach purée, stirring for 2 minutes.
Pour in water, add salt, and bring it to a boil.
Cover and simmer for 5-7 minutes until the rice is perfectly cooked.

Red Rice (Beetroot Rice) Method

For a rich red color, I’ll use beetroot purée.

Heat oil in a pan and add cumin seeds and garlic.
Add rice and beetroot purée, sautéing for a couple of minutes.
Pour in water, add salt, and cook until done.

Orange Rice (Carrot Rice) Method

To bring an orange hue, I’ll use carrot purée.

Heat oil, sauté cumin seeds and garlic.
Add 1/2 cup rice and carrot purée, cooking for 2 minutes.
Add water and salt, then cook until soft and fragrant.

White Rice Method (Simple Jeera Rice)

For contrast, I’ll prepare plain white rice with minimal spices.

Sauté cumin seeds and garlic lightly in oil (be careful not to over-fry, as it may change the color of the rice).
Add rice, water, and salt. Cook until soft and fluffy.

Serving Suggestion

Arrange all four colorful rice varieties on a plate artistically, creating a visually stunning meal. Pair it with raita for a complete, wholesome dish.

Each bite is packed with essential nutrients—iron from spinach, antioxidants from beetroot, beta-carotene from carrots, and simple yet satisfying white rice for balance. You can also cook one color at a time on different days for variety.
