Delicious & Healthy Potato, Broccoli, and Peas Stir Fry

Today I wanted to make a different kind of vegetable stir fry. I used to make a stir fry with potatoes, peas and cauliflower, but I've recently read that broccoli is a very healthy vegetable. My mother-in-law used to smile and call it "English cauliflower"!😀 I think that mixing broccoli with potatoes and peas makes a delicious and healthy dish that is perfect for any meal.

𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨:

Potatoes (cut into cubes) - 250 g

Peas - 250 g

Broccoli (cut into small florets) - 1

Onion - 1 large (chopped)

Oil - 2 tablespoon

Turmeric powder - 1/2 tsp

Chilly flakes - 1/2 tsp

Salt to taste

Tomatoes - 1 large (chopped)

Step by Step Recipe -

Heat the Oil:

First, heat up a little oil in a pan. When the oil is hot, add chopped onion, then add turmeric. The turmeric will give your dish a beautiful yellow color and a little flavor.

Add the Potatoes:
🔸🔸🔸🔸🔸🔸🔸
Next add the potato to the pan. Stir them well so that the potato get coated evenly with the turmeric oil.

Mix in the Peas and Broccoli:
🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸
After a few minutes add the peas and broccoli. Stir the vegetables. Even though this is the first time I’ve made this dish with broccoli, it mixes very well with the potatoes and peas.

Season with Salt:
🔸🔸🔸🔸🔸🔸🔸
Sprinkle some salt and chilly flakes over the vegetables and mix again. The salt brings out the natural flavors.

Add Tomatoes and Cook:
🔸🔸🔸🔸🔸🔸🔸🔸🔸
Finally add the chopped tomatoes to the pan. Turn the heat down and let the vegetables cook slowly. Keep stirring until the potatoes are soft and everything is well combined.

Once the veggies are cooked through you can serve this dish with garnish coriander leaves.

It is so delicious and full of vitamins and minerals. Enjoy and feel great about eating something tasty and healthy!
