There are different kinds of food on this planet and many are delicacies. The subcontinent of west Africa is richly blessed with some spicy and tasteful dishes.
One of such dishes is eaten in Akwa Ibom State in Nigeria. It is called Igwe Ekpang and Otong Soup.
As with most west African dishes this one too is based on a tuber- cassava.
The cassava is harvested, peeled then grated. The cassava is grated into a paste like form, it is then wrapped in stripes of plantain leaves and cooked until it becomes done. It is eaten as a swallow with the soup.
To cook the soup one has to have all the ingredients ready. I am not trying to establish a recipe for cooking the soup however what I can say is that the soup this like okra soup but with a special twist and a peculiar flavour that can best be described as heavenly.
