    • Today I join again the creative Sunday with a sweet recipe 🍡. For this snack today, I decided to prepare an exquisite lemon cake 🍋, with a delicious Maria cookie base, orange flavor 🍊and a condensed milk and lemon filling.
    • This cake is simply wonderful. With its citrusy and refreshing flavor in every bite, it has fascinated everyone at home. Plus, it's easy to prepare, making it the perfect choice to enjoy this family Sunday.

Without further ado, here are the ingredients and the step-by-step:

For the cake:

-2 packages of maria cookies of 200 grams each.
-4 egg yolks.
-1 cup of sugar.
-4 lemons.
-340 grams of condensed milk.
-1 tablespoon vanilla essence.
-5 tablespoons butter.
-Lemon zest to taste.
-Cinnamon powder to taste.

For the Swiss meringue:

-1 cup sugar.
-1 dash of lemon 🍋.
-4 egg whites 🥚.

𝐏𝐫𝐞𝐩𝐚𝐫𝐚𝐭𝐢𝐨𝐧:

-* To begin the preparation, we take the butter at room temperature to a frying pan to melt, when it is completely liquid we remove it from the heat.

-* While the butter reaches room temperature, remove the maria crackers from the plastic bag, put them in another large plastic bag and crush them all with a kitchen hammer, then place them on the tray.

-* Add the butter to the crushed cookies, stir and spread very well all over the tray.

-* Separate the egg whites from the yolks. Reserve.

-* Add the condensed milk to a container, beat the egg yolks with the help of a whisk, then add the lemon juice and stir well until a smooth and homogeneous mixture is formed.

-* Add the lemon zest and the cinnamon powder, stir all these ingredients together and add to the reserved maria cookie base.

-* Transfer the pan with the cake mixture to the oven for approximately 15 minutes.

-* After a few minutes remove the base of the cake from the oven and let it cool down, when it is cold put it in the refrigerator while we make the Swiss meringue that we are going to put on top of the cake, for this we put the egg whites beaten by hand in a pot, put a small pot on the fire and add water, to make the Swiss meringue in a bain-marie, we wait for the water to boil and then we put the yolks and sugar on top of the pot, stir constantly, then we add the lemon juice and the vanilla essence, we keep stirring until the sugar dissolves, then, we remove from the heat and beat until it reaches stiff peaks and is firm.

-* Once the Swiss meringue is ready, remove the cake base from the refrigerator and add it on top, spread with the help of a spoon over the entire surface and sprinkle with lemon zest 🍋.

-* Ready our delicious lemon cake, to finish, I also added to decorate some meringues that I had ready from another preparation, we just have to enjoy our Sunday dessert.
