Creative Sunday - cooking a delicious homemade plantain sauce with akamu

Sundays are often considered as a day to rest, but for me it a day to unleash my creativity. This Sunday i decided to try my hands at cooking a delicious homemade plantain sauce with akamu, a staple in many Nigerians household. This process was not only therapeutic but also satisfying and rewarding, yielding a favourable sauce that surpassed my expectations.

Inspiration struck when I remember my childhood memories of me helping my grandmother prepare akuma and plantain sauce for breakfast and so I decided to incorporate this familiar ingredients into my cooking today. The combination seemed unconventional , but I was eager to experiment.

INGREDIENTS

• plantain (ripe or unripe)
• tomatoes
• pepper
• onions
• eggs
• vegetable oil
• akamu and
• sugar

The cooking process

First I began by peeling my plantains and chopping them into my desired shape and small pieces.

After cutting the plantains, I then added my vegetable oil to my frying pot and I also added my plantain inside and allow it to fry for some minutes.

In this step, I then brought out my plantain from the fire which it was frying and keep aside. After that, I then began to cut my onions, tomatoes and pepper together.

After I finished cutting my ingredients such as onions, tomato and pepper, I then added my egg with a pinch of salt to it and stir to my satisfaction.

Here I added some oil to my frying pot and allowed it to boil for some few minutes. Remember not to allow it burn or stick to the pot cause it will definitely spoil the taste of the sauce.

After some minutes of frying and boiling, I then brought down the frying pot and your sauce is now ready and it's time to make the akamu.

To prepare your akamu, dissolve it in a plate and add your boiled water to it and stir till it becomes somehow thick and then add your sugar.

At last your plantain sauce with akamu is now ready for consumption and eating.

This diy creative Sunday was a resounding success and cooking homemade plantain sauce not only satisfied my taste buds but also reconnected me with my past and heritage. I encourage everyone to take a Sunday and explore their creativity in the kitchen. Who knows what delicious creation you may come up with ?.
