It is another wonderful Sunday to be here, I wish us all a prosperous new week, being creative does not necessarily mean art, there are ways in which you can bring your skills to this community.
Today I will be showing you my method of cooking ogbono soup, ogbono soup is one of the Nigerian soups, it is mostly common in the Eastern part of the country, though part of the Southwest knows about this soup but it is not that common.
Ogbono is gotten from a fruit called African bush mango, the seed in this fruit is what we call ogbono, after eating the fruit there is a seed in it that you will dry and crack into two to get the ogbono, like I said it is mostly common in Nigeria. There are different methods of cooking ogbono soup but the one I showed in this video is my method of cooking it.
INGREDIENTS USED
💗Ogbono seed
💗Red oil
💗Crayfish
💗Seasoning cubes
💗Cowskin
💗Dryfish
💗Pepper
💗Fresh fish
💗Vegetable
💗STEP 1
I prepared all my ingredients, washed some, deboned the dried fish and cut my vegetables, blended the ogbono seed into a powdered form, and the crayfish, I blended the pepper as well then set all my ingredients aside, this is how I love to prepare all my meals, I love to prep all my ingredients at once so that it would be easy for me to use and be fast about my cooking.
💗STEP 2
I added my red oil to the powered ogbono to form a paste, then in my pot, I added a little water and added the blended pepper into the water, added the seasoning cubes and salt into the water, I then poured in all my protein, I mean the dishes and the cow skin, I wanted everything to cook together and be soft, I covered for some minutes and after boiling I sense that the fish would have boiled enough, I remove the fish from the mixture before adding the ogbono, it requires thorough mixing so that the fishes will not break into pieces.
💗STEP 3
I tasted for salt and seasoning cubes so that I would be sure if to add more or not, this is the time to do that in other to adjust it, I then added the ogbono and mixed thoroughly, I added more water because the consistency is thicker than expected, after adding the ogbono I leave it to cook for some minutes without covering it, some people said it would not be slimming again after covering the pot but I do not believe that theory, after cooking for some minutes I then added the vegetable, I used ugwu leave for this, I mixed very well and pour in back the fishes I remove at first.
💗THE LAST STEP
I added the crayfish for more flavor and cover to steam for a minute on a low heat, I prefer to turn off the gas at this stage because the soup does not require any heat again just the steam from the soup can cook the Vegetable in it. The soup is ready and this can be paired with any swallow of your choice
