MY METHOD OF COOKING NIGERIA PARTY JOLLOF RICE

Welcome to another episode of hivelearners Creative Sunday where creativity is appreciated, today I will be cooking party jollof rice, party jollof rice is one of Nigerian's best meals, it is called party jollof rice because it is usually served at every party in Nigeria and the taste is always different from our usual and everyday rice.

I got a contract to cook for twenty people at a seminar so I will be taking us through my process of preparing this food in large portions. The quality of spices used is based Accord to the quantity of rice you are cooking, since I am cooking for over twenty people then I use more ingredients.

INGREDIENTS USED
Rice
💗Chicken stock
💗Tomato paste
💗Spicy
💗Gizzard
💗Onions
💗Peppers
💗Vegetable oil
💗Butter
💗Seasoning cubes
💗Curry and thyme
💗Bay leaf

💗My first process was to bring out my ingredients, rinse them thoroughly, and prepare them, I used three types of peppers red bell peppers, scotch bonnet peppers, and Cayenne Peppers with my tomatoes, I blended them with onions and parboiled them for some minute in other to reduce the excess water and give me a better flavor.

💗Secondly, I cooked the chicken I would be using and fried them because the stock is what I would be using and the vegetable oil used in frying the chicken is also usable, I set all those aside before going into the main deal. In my cooking pot, I added a bit of butter and used it to rub all over the pot after heating before adding the vegetable oil, this process is optional but it always gives that party jollof rice vibes, it is a way of adding more flavor in your food, though you can neglect that part but I always love to use that.

💗I used the vegetable oil that I used in frying the chicken for extra flavor as well, I added the diced onions and fried for some minutes, this process will help your onions to release their juice inside your cooking, after some minutes of frying then I added my Gino party jollof rice tomato paste, this tomato paste is a game changer when it comes to jollof rice, always take your time to fry the tomato paste on low heat till the vegetable oil start floating on top of the tomato paste that is when you will know that you are doing a great job.

💗After that process, I added my parboiled pepper mix into then fry together, this only took a few minutes because the pepper mix was boiled already, I added the chicken stock and mixed, I started adding the jollof seasoning, and I used three jollof signature, this will help in giving us that party jollof look and also give us a taste of it, I added the ginger and garlic powder seasoning too, and four bay leaves into it, covered to mix for some minutes.

💗After some minutes, I used my spatula to turn it and taste for salt, I never added my seasoning cubes and salt because of the chicken stock I used with the spices, some of the spices contain extra salt, I tasted it and I realized it needed salt and seasoning, I have to be careful so that it will not be salty.

💗The next process is adding my washed rice to the mixture and turning it thoroughly before adding water to it, I love adding water bit by bit so that the rice will not be soggy, I did that and covered it to cook on low heat, after some minutes I check it and they are still strong, I covered it and give it some times. After cooking I added my diced onions with extra butter and the diced gizzard, covered them together, and left for some minutes, after some minutes I then mixed them and the rice was ready to serve.
