Today I made some eggrolls using some leftovers pumpkin and spinach. Not so hard very simple, tasty, and easy. Just need a good frying pan.
Hello, Happy Sunday and greetings to the community here is another Sunday to join this creative Sunday initiative, by the community #hivelearners. I am happy to join this creative event, wishing all the best to all participants.
Ingredients:
2 big eggs
1 tbsp sticky rice flour
salt and pepper according to taste.
1 tsp cooking oil
1 tbsp pumpkin puree
1 tbsp spinach puree. ( pumpkin and spinach steamed and smashed it is leftover)
2 slices of baked turkey breast (leftover if you have it).
and 1/4 tomato removed seeds and sliced.
In both bowls spinach and pumpkin add 1 tsp rice flour each.
1 egg each
Pinches of salt and pepper in each bowl.
1/4 tomato sliced removed seeds.
Mix it nicely using a hand blender or fork.
and make green and orange batter. Like pancake consistency.
Heat pan, keep low heat, and brush oil. pure the green batter in the pan like a pancake. cover it for a minute
After 1 minute remove the cover and place the turkey slices and tomato slices on the edge of the fried green egg.
roll it over part way.
Very carefully without breaking the egg pancake roll the endpoint where we placed turkey slices. side by side slide it to make more place for orange egg batter.
Start pouring the orange batter connecting to the green one.
when the orange egg is cooked solid keep rolling and sliding them.
when the green is completely rolled it will be on top of the orange. keep rolling orange around the green.
It is done.
Remove from pan and cut it according to the desired shape.
Here they are.
Enjoy as a breakfast, lunch, snack, or appetizer.

hmmmm this looks good and I liked how you plated it. It looks fancy. When they say we eat with our eyes first it really is true. and then if it tastes as good as it looks well its a big win hehe. Hi, @shawnnft thank you very much. If you know the Indian medicine Ayurveda, we learned food has sin, touch, taste, smell, and sound. and food digested with all these senses. I started with half-cooked rice and salty sauce. But time teaches us. we learned practice makes a man perfect. try it doesn't work the first time but sure it will work after a few tries. even if you don't need to display this way start with making a simple pancake. One day you will be a very good cook. Thanks for your support and curation.
