Today I am sharing Panjeeri recipe with you all.
Many states have different variation of making panjeeri.
Mine is the easiest way to make panjeeri with some helathy ingredients.
Panjeeri is Sweet dish prepared for Krishna Janmasthmi festival. It has healthy fats and omega -3. Panjeeri is a mix of nuts, seeds, clarified butter, coriander powder, jaggery or sugar and many more. Panjeeri is also good for postpartum healing.
I remembered for my firstborn,my mother made Panjeeri for me to eat . It contains so many nutrition and woman should have after delivery. It heals the full body , bones, and gives healthy fats what a woman needs post partum times. It has a warm properties. So it can be given to peoples who are ill and want recovery as soon as possible.
It is delicious with medical values.
So lets see how to make
Ingredients
✅foxnuts-1cup
✅gond(edible gum) known as Tragacanth gum-⅓ cup
✅almonds-¼cup
✅cashews-¼cup
✅sugar-½cup(powdered)
✅coriander seeds -½cup
✅Clarified butter/ghee-5 tspn
✅basil leaves - fir Garnish.
METHOD-
1.heat ghee in a kadhai.
2.Now add fox nuts. Roast it.l for 5 mins in low flame.
3.add some almonds and cashews. Roast them too.
4.in the same kadhai add little ghee more and the roast coriander seeds for 2 mins.
Now roast Gond... this is Edible Gum(gond).
Gond will be like this shown in the pics below.
Roast them in Ghee.
All ingredients will roast and keep aside.
In a mixer grinder take all the roasted ingredients along with sugar and grind it in a coarse powder
Transfer it in a bowl and add some basil leaves !
