Cook with me: delicious Nigerian breakfast(creative Sunday).

Hive hive learners! Happy creative Sunday! I want to share with you one of my favourite meals this Sunday.

My family and I were discussing what to eat since we have always been eating repeated meals, which is very tiring. We just wanted something new or different for breakfast. Though, my brother persuaded me to cook a recipe he saw on Instagram, without giving the reference video, all he had to offer was a faint description of the recipe video. And I know I could not work with that.

I love my Nigerian food, and I knew my brother's effort in persuading me to cook some strange recipe wouldn't work. Don't get me wrong, I love trying out new recipes, but not on a day when I have a deadline to meet and am tired. I just wanted to cook and get along with the rest of my to-do list.

I remembered that it had been a while since we ate moi moi (bean pudding). This food is very versatile and can be eaten with almost anything. I decided to make it with ogi(pap) which is made from corn.

Making the meal was a bit time-consuming. I had to get the ingredients and then cook it. We ended up eating breakfast around 2pm. However, every second and effort was worth it and I will definitely cook it again.


The ingredients
For the moi moi(bean pudding): beans, pepper, onions, tomatoes, egg, spices, salt, seasoning cubes, smoked fish and oil

For the pap: pap(made from corn), sugar to taste, and evaporated milk(optional)


The process


I soaked the beans for about 30 minutes, scrubbed off the skin and sieved it out. I soaked the scrubbed beans again for about 1 hour.

In the meantime, I prep all the other ingredients I will be using.
I boiled 4 eggs and set aside.

I washed and deboned the smoked fish and set aside

I washed my peppers, tomatoes, and onions

I drain out the water from the beans and blend it till smooth with the peppers, tomatoes and onions.

I poured the puree into a pot, I added salts, spices(curry, ginger and garlic powder), oil, seasoning cubes, and smoked fish. And I mixed everything well.

I put the puree in portions into nylon wraps since I don't have moi Mot leaves or tins which are better options.

I cut the eggs into smaller pieces and put them in the nylon wraps before tying them well.

To prevent the nylon wraps from burning or sticking to the pot. Then I put the warped purees inside the nylon. I put them in a big nylon and poured water in the nylon and also in the pot to create steam.

I cover it up and steam it for about an hours

After cooking, I began to make the pap immediately.

I boiled enough water. While the water was boiling, in a separate bowl, I put my pap into room temperature water and mixed till smooth and without any lump.

I pour it into bubbling boiling water, stirring continuously to prevent lumps.

I added sugar and milk to the pap and served it with the hot moi moi I just made.

The blend of the savoury taste of the moi moi and the sweet taste of the pap, tasted like heaven on my taste buds.haha I might be exaggerating a bit but it tasted so good. The taste made me forget all the stress I went through making it.
