I woke up this morning feeling jiggy. I worked the night shift two nights ago and didn’t really sleep well the day after, so I used last night to catch up on all the sleep my body was begging me to give it.

Now this morning, I woke up craving something unusual but common for me: oatmeal. Who craves Oatmeal?😅😅 For some reason I couldn’t get the image of milky, soggy oatmeal out of my head. So I checked the pantry, and sure enough, we had some oatmeal.

I searched for some other things I could add to it, and I came up with some eggs, two sticks of banana, and a tangerine. And just like that, my breakfast was sorted.

I invite you to join me as I prepare what I thought would be a delicious and nutritious meal, packed with antioxidants, vitamins, protein, and some good ole potassium!

Preparation

I got together my ingredients of oatmeal, two sticks of ripe banana, a sweet tangerine, and two raw eggs.

  1. I started by pouring my oatmeal into a pot and adding some water to cover it a little. Then I put it on the burner and brought it to a boil.
  • At first it will be light and watery, but as it boils, it will turn thick and creamy. This normally takes about 2–3 minutes after boiling. Continue to stir.

  • When it changes in texture, you can add water to your desired level of thickness. I like mine quite thick, so I didn’t add a lot of water. When you are satisfied with the thickness, stir one last time and transfer to your bowl of choice.

  1. I then proceeded to break my eggs into a bowl and added two pinches of salt—I like salt😄—and a pinch of pepper. I whisked my eggs for 3 minutes. I like to keep my fried egg simple. I then greased my pan with about two tablespoons of vegetable oil and waited for 2 minutes for it to get hot.

  • After this, I poured my whisked eggs into the pan and waited for a minute till the eggs had cooked and turned a gold brown on the side touching the pan. Then I flipped it onto the other side and did the same thing. When it was done, I plated it.

  1. That was most of the work. I then peeled my banana; I sliced one into the bowl of oatmeal and left the second one whole on the plate.

  1. Then I separated my tangerine and arranged it onto my plate like so.

And there you have it, my oatmeal with a side of eggs, banana, and tangerine.

Now it looks all cute and pretty. And it tasted even better, but if I were to do it all over again, I wouldn’t mix these together because the taste of the oatmeal clashed with the saltiness of the eggs and the sweet acidity of the tangerine. I would rather eat them separately, I think they would be enjoyed that way instead.
