Some days, you don’t have the time for an elaborate meal, but you still want to eat well.
Here’s a dinner creation, too good not to share, that works well on cold days like these.
Season salmon with ground pepper & a full lime.
Top with 3 tablespoons of pesto
Sprinkled pistachios
Circle with broccoli
Add half an onion
Drizzle olive oil.
And, if you happen to have a pineapple lying around (and enjoy sweet and sour flavors) add some slices in there, too.
Then, just pop in the colorful baking tray into the oven, at 375 degrees, for 25 minutes & presto!
Pair with a white wine (we chose Bartenura, Moscato) to make it sing :)
Not only is this a meal that makes itself, it also eats itself..
