You're right, a lot of anime we love and keep praising are solely our of nostalgia despite having terrible animations. As great as one piece is believed to be, the first 300 episodes are really terrible animation wise I could barely even watch it. I had to skip to episode 450, get caught up with anime before going back to watch them just so I don't miss any vital information.

It's largely because we watched these animations as children and teenagers. As people have less time and are older, they are more demanding. I once talked to my friends about re-watching OP and none of us (apart from really strong fanboys and fangirls) wanted to watch it multiple times, especially at the university stage. After the Water7 arc and long after, there is also a decline in animation :(. In this case, I'm counting on WIT and the OP remake they are working on.
