I have never cared for radishes and my husband planted 3 big pots of them. I pulled some today to pickle. I have never had pickled radishes. I was telling my husband about how hot they get when they are bigger and I hope these were not too big. He says did you taste them, I cut a piece and bit into it, my tongue was on fire. I went ahead and cut enough up for one jar. Maybe they won't be as hot pickled or we will have hot pickled radishes to give someone.
I had a few squash left that I wanted to try pickled so I cut them up too. I used the recipe from my Aunt Mae's canning book.
I put the zucchini and onions in a bowl and after bringing the vinegar solution to a boil I poured it over the squash and radishes and let it sit for one hour. Next, I put it in a pot and boiled it for 3 minutes, now it was ready for the jars.
I was confused as to what to do because the recipe says to pack in jars, but it did not say if the juice went in the jar too, I put it in.
I have been looking at this recipe for a couple of days now and thought it was a simple process. This simple process took me most of the day, my back was hurting so bad after standing in the kitchen for so long.
I finally finished the "pickles" and thought I could sit down with the heating pad on my back, but I saw the time, kick me when I’m down it is 4:30, I can not sit, I have to go outside and collect grass and garden veggies for Rudy. It is now 5:30 and I got his cage cleaned and his food for the night, now I can sit with the heating pad and it feels so good.

Some people are quite fond of pickles. Around me, most of the people are South Indians. They love pickles, the bitter one (at least it tastes like that, to me). I am not that much pickles eater!
