BBitter lead soup (ofe onugbu) is a cultural soup mostly cooked and eaten by the eastern part of Nigeria (Igbos), although it has been adopted by other part of Nigeria due to its delicious taste 😋😋😋, but it origin can always be traced down to the eastern part of Nigeria, the main vegetable that make up the bitter leaf soup is called bitterleaf. The lead is bitter naturally but after washing it, it lost all bitter taste and can be used to make your delicious bitterleaf soup, join me as I take you on the process of how to cook "onugbu soup" and I hope you try it out for Christmas.
INGREDIENTS
- Meat ( I prefer goat meat for mine)
*Stock fish
*Salt
*Cocoyam
*Bitterleaf
*Seasing cube
*Ogiri/okpei/iru/dawada - Banga (palmnut)
- Pepper
*Crayfish
PREPARATION
Wash your bitterleaf with clean water until it lost its bitter taste , then set aside
Put your cocoyam and banga on the. Fire and when they are properly cooked and tender ,you peel the back of the cocoyam and pound smoothly, then set aside and then pound the banga and extract the palmnut juice and set aside
For your meat, you parboil your meat with your seasoning and when it's ok or done to your taste you keep the meat and it's stock aside , although for me i like to simply season my meat with maggi and salt
STEP 1: put your palmnut extracted juice on the fire and then add your stock fishes and your meat and allow to cook a little for 5 mins
Step2: then you add your already pounded cocoyam for thickening and let it cook for atleast 15 more mins till the cocoyam dissolves
Step3: add your crayfish, pepper and your ogiri and stir
Step 4: add your stock fish , dried fish or any other fish you like
Step 5:add your stock cube , cover and allow to boil for 5 mins
Step 6: then add your already washed butter leaf and allow it cook for at most 3 minutes and wolllaaaaaaaaa your bitterleaf soup is ready , just follow this easy steps and thank Me later .
It can be eaten with akpu, demo,garri, etc
