You should be a tour guide as you have talent regarding detailed descriptions. I've learnt quite a lof from your post and the photos are lovely.
Most likely you don't know but most of the European churches and fortresses were rebuilt several times over the decades, centuries. The most common reason for that was that wood is very flammable and many burntdown. The other was the constant attacks these places were facing. In the 1700's half of Hamburg burnt down. Houses were built of wood and very close to each other. The cathedral burnt down too.

I know this cathedral also burned. Not sure about the cause. All the cathedrals I have visited have been either reconstructed or are in the process of. It is really cool to see these structures from many many years ago still being given a new breath of life.
