Sometimes you just want to eat a simple food utilizing the ingredients you have in your fridge. Without overthinking, I tried to combine green beans, eggplants and two species of squash – the sweet one and the green zucchini. Do you do that too? Open the cupboard and try to make food out of what you find in there?
My habits are even more peculiar, as I sometimes save a few extra ingredients in case of emergency! For instance, in my fridge, you will very often find carrots as it is a vegetable used in many dishes which doesn’t easily rot! Same stands with dried legumes. I often buy them from a village during summer and consume them during winter – yes like ants! So here it is.
Ingredients: 300gr green beans the thin and long type, a couple of green zucchinis cut in pieces, a couple of small eggplants cut in pieces, a few pieces of pumpkin, 1 onion chopped, broth, one carrot chopped, a couple of tablespoons of parsley, salt and pepper to taste, a cup of olive oil (I tried to put less but I think this food is elevated with good quality olive oil)
In your pressure cooker, sauté the onion in the olive oil on a medium fire. Add the carrots and all the vegetables along with the green beans and toss well. Add your parsley and some broth to cover half the height of your food. Close the pressure cooker and let the food simmer for 30’.
Once you open the pressure cooker, your food must be ready. Accompany it with feta cheese or whichever side dish you prefer. Enjoy!
