These fungi are so named because they are foliose, with irregular branches growing fruit, or appear gelatinous. In fact, many are somewhat spongy. . When dry, jelly mushrooms become hard and wrinkled, when exposed to water, they return to their original shape. Some jelly mushrooms can be eaten raw; Jelly mushrooms are rarely poisonous.
