To begin making the roll, we will be using a stand mixer. Start with six large egg whites, and if your eggs aren't particularly large, you can add an extra egg. Beat the egg whites on high speed for about three minutes until stiff.
Next, slowly add the six egg yolks and mix for another three minutes. Then, incorporate half a cup of sugar—either crystal or refined. Continue beating at maximum speed for five more minutes until achieving a light and fluffy texture.
After mixing, transfer the batter into a large bowl. Next, add half a cup of flour and half a teaspoon of baking powder. Mix gently until the flour is no longer visible.
