Once baked, carefully remove the tray from the oven. To release the Rook Ball from the tray, run a knife around the edges. Place a clean kitchen towel on your work surface and gently invert the baked cake onto it. While still warm, roll the cake tightly in the towel to create a spiral shape and allow it to cool for about 30 minutes.
Filling with Pastry Cream
While the cake cools, prepare the pastry cream if you haven’t done so already (the recipe can be found in a previous video). After the Rook Ball has cooled, unroll it gently and generously spread the pastry cream on top. Then, carefully roll the cake back up into its spiral form.
