To begin with our noodle dish, we start with rice noodles, which need to be soaked in hot water for about 12 to 15 minutes until they soften. If you have a wok, that's ideal, but a regular frying pan works just as well.
Preparation of the chicken is key here. We take a lean chicken breast and slice it into thin strips; a technique referred to as "butterflying." This method ensures that the chicken cooks quickly and crisply. After this, garlic and fresh broccoli are finely chopped and prepared.
