Elevating Mashed Potatoes with Goat Cheese
When it comes to comfort food, few dishes are as universally beloved as mashed potatoes. But what if you could take this classic and make it even better? That's exactly what our chef has in mind with their creation of Goat Cheese Mashed Potatoes.
Starting with 3 lbs of Yukon Gold potatoes, the chef peels and dices them, adding 5 cloves of garlic and a tablespoon of salt directly to the water. Instead of mashing the potatoes, they opt to puree them in a food mill, which gives the dish a wonderfully smooth yet textured consistency. The food mill also ensures the garlic gets evenly incorporated throughout.
