The Cooking Process
Choosing the right oil is critical to achieving the perfect lka. A high smoke point oil like grapeseed or avocado oil works wonders. As you heat the oil, maintain a consistent temperature between 300°F to 375°F.
To form the lka, shape the potato mixture into small, flat patties or ‘balls.’ Gently lower them into the hot oil and allow them to cook until they turn golden brown and crispy.
