Start by heating a pan until it's very hot. A teaspoon of olive oil is added, followed by the pork, held by the bone to minimize contact with your hands. As the chop cooks, tilt it to ensure even cooking, especially the back, which often requires more heat to render the fat. After approximately seven to eight minutes total cooking time for an eight-ounce chop, add a couple of knobs of butter to the pan.
