While the chicken marinates, prepare the vegetables. Start by slicing the cabbage and matchsticking the carrots. Then chop the scallions, separating the white ends from the green tops. Finally, mince the ginger and garlic.
Once your chicken is marinated, coat it with 2 tablespoons of cornstarch. This step ensures that the chicken remains juicy and tender throughout the stir-frying process.
