Now, it’s time to cook the aromatic base. Stir-fry the minced ginger, garlic, and scallion whites for about 1 minute until fragrant. Afterward, add the carrots and stir-fry for an additional 2 minutes. Finally, toss in the cabbage and stir-fry until the vegetables are lightly charred. Set all the cooked vegetables aside once they’re done.
The next step is to stir-fry the noodles. Add them to the wok and fry them for a couple of minutes. This process enhances their flavor. Then, return the stir-fried chicken and vegetables to the wok.
Pour in the prepared sauce mixture and mix everything well. Stir-fry for a couple of minutes, ensuring that the noodles do not break by using chopsticks or tongs.
