After the bulk of the mixing, add in the previously set-aside egg whites. This adds an extra lightness to the batter while maintaining its thickness, creating a deliciously rich pancake.
Cooking the Pancakes
Allow the mixture to rest for about five minutes. In the meantime, preheat your griddle on a lower setting to accommodate the thickness of the batter. Pour the batter onto the cooking surface, being cautious that these pancakes need a bit longer to cook than standard pancakes—about four to five minutes on the first side.
You won't see the usual bubbles forming on the top, so check for a golden brown color on the underside before flipping, which takes another two to three minutes on the other side.
