Refried Beans with Chorizo
While her veggies roasted, Rachel shifted her focus to the refried beans, which would include chorizo for added flavor. She started by melting some bacon grease in a skillet, then sautéed finely chopped onions until translucent. Following this, homemade chorizo was added to cook thoroughly.
She brought out her pre-cooked beans, stored conveniently in a Ziploc bag, and added them to the skillet with the chorizo and onions, stirring everything together for rich flavor. Though some may consider it greasy, she reassured that this added fat is essential for a tasty dish.
