Before diving into the sauces, it’s essential to properly prepare the tofu. Start with a block of extra-firm tofu and slice it into four long slabs. To remove excess moisture—which is vital for texture and flavor absorption—wrap the slabs in a clean dish towel and weigh them down with a heavy object, such as a cookbook. Allow them to press for about 15 minutes. While the tofu is draining, take advantage of this time by whipping up the accompanying sauces.
Sauces to Complement Tofu
1. Spicy Peanut Sauce
This first sauce is a go-to for a quick flavor punch. Mix together:
1/4 cup organic peanut butter
1 tablespoon agave nectar
2 teaspoons soy sauce
2 teaspoons toasted sesame oil
2 tablespoons lime juice
1 teaspoon red pepper flakes
