Cooling and Chilling
To halt the cooking process, cool your custard quickly; an ice bath is a highly effective method. After cooling to room temperature, refrigerate the custard for at least four hours—or up to two days for intensified flavors. The time will allow the mixture to age, much like fine cookies or bread, leading to a richer and more concentrated ice cream.
