Once kneaded, place the dough in a greased bowl, cover it securely with cling wrap and a tea towel, and leave it to rise for approximately 1.5 hours. The dough may not double in size due to its density, but with patience, it will rise beautifully, ready to be shaped.
Perfecting the Shape
After proofing, it's time to shape the rolls. Divide the dough into 12 equal portions, aiming for rolls a little under four ounces each. The key to achieving a smooth roll is to gather the rough edges on the bottom and roll gently on the countertop, creating a seamless surface.
