Next, it's time to make your own ramen noodles. The key ingredient here is adding a bit of alkalinity through baking soda, which imparts that characteristic chewiness. You can bake your baking soda in the oven for a more potent effect, but using it directly is also effective.
Combine flour, baking soda, and salt in a mixing bowl, then gradually add water to form a dough. Knead the dough until it becomes smooth and elastic, which should take about five minutes. Let it rest covered for approximately an hour before rolling it into thin noodle strands. If fresh noodles are too daunting, store-bought options are an excellent substitute.
