Once the onions become translucent, add in the mushrooms. They’ll shrink down quite a bit, releasing their moisture and concentrating their flavor. Allow them to cook for a few minutes before seasoning with soy sauce, which adds both color and flavor.
Step 4: Adding Cream and Cheese
At this stage, it’s time to incorporate the cream. Allow the mixture to simmer together until it thickens slightly. Then, toss in some grated Parmesan and a touch of gorgonzola. The key is to balance the flavors without letting the gorgonzola dominate.
